Shallot Vinaigrette
Ingredients

2 Tbsp. French red vinegar
2 Tbsp. finely chopped fresh shallots
1/2 tsp. salt
1/4 tsp. pepper
2 tsp.    Dijon style mustard
6 Tbsp. olive oil
1 Tbsp. lemon juice
Preparation

Using a blender, add first 5 ingredients and, with blender running, add oil. Continue
blending. Add in lemon juice.  Serve chilled.
