Southern Style Squash
6 Yellow squash
1 Small chopped onion or 3 medium shallots
2 Cloves garlic
1/2 Pound bacon
1 tsp. Salt
1/2 tsp. Black pepper
Wash squash and cut into slices. Place in a large saucepan, cover with water and
boil until squash is tender. Drain well. Brown bacon in large skillet and set aside.
Sauté onion, garlic and/or shallots in bacon drippings. Add browned bacon, squash,
salt, and black pepper. Cook over medium high heat, stirring constantly until squash
begins to brown. Add more salt and pepper if desired. Serve hot.
